Everybody knows that special experience of biting into perfectly ripened summer peaches.That unmistakable memory of the juice dribbling down your chin. This cocktail is so delicious you’re at risk of spilling it down the sides of your chin because you’re trying to drink it too quickly.
- BOS Peach Ice Tea
- 15ml reduced peach syrup
- smoked lemon grass
- 15ml lemon juice
- 1 ½ (37ml) gin
- can of peaches
- 25ml egg white
Create your own reduced peach syrup:
- Take a can of poached peaches and place in a hot pan
- Add 200ml of dry white wine & slowly cook
- Add a bit more wine to the peaches until you get a reduced syrup
Add gin, reduced peach syrup, fresh lemon juice, BOS Peach and beaten egg white together. Shake and fine strain the mixture into a coupe* glass before garnishing with a shoot of smoked lemongrass.
*Legend has it that the coupe glass was moulded from Marie Antoinette’s left breast
